You mention that you can't have anything perishable at work? I am curious how long you go between meals. Because a lot of food can stay in a little plastic baggie for several hours before going sour.
You might have already considered this, but taking a lunch box packed with a sandwich and a fruit is a good way to go. Bananas are really nice because they come in their own little package.
My lunch sandwiches tend to consist of whole wheat bread, avocado, tomato, cucumber, spinach, vegan mayo and any other veggies I can get a hold of. Sometimes I make whole wheat pasta and throw a little of that in with steamed frozen veggies ( whatever comes in the packages) and a heap of pasta sauce. Brown rice and veggies is another good option. I find that these meals don't quickly perish. When I make lunch it's usually in the morning, and I eat it about 5-6 hours later at school, sometimes even later if I forget.
While the instant dinners are a convenient option, they aren't the most healthy because of the amount of sodium. But if that's all you can get, then I wouldn't worry too much. Try to balance it out by drinking plenty of water to flush the salt away.
I've never tried vegan mayo, I wonder if its any good… I do love making sandwiches, I think right now it boils down to the fact that we haven't been able to go shopping lately, money is really tight. But now that I can think about what you said more thoroughly, I can budget in getting more sandwich stuff and veggies for pasta, since we've got plenty of wheat pasta. I would be pretty happy eating stuff like that for lunch.
Strangely enough, I enjoy "naked noodles" more than putting a sauce on them, I just use olive oil, a bit of natural butter (NOT margarine) and some Italian herbs and I'm good to go. Also its because if I eat anything tomato based at night, it makes me sick to the point where I'd get heart burn or I'd even throw it up. Its weird.
I think what I'll start doing is making a larger dinner and put the rest in a tupperware for lunch the next day.
OH! I almost forgot, I haven't been buying a lot of veggies lately because they don't keep well for me because I forget about them. I recently bought some of those Green Bags from Bed Bath & Beyond, they're supposed to keep veggies fresh, so I'm going to test it and buy an assortment of veggies and fruit to see if it holds true. It would be really helpful for me because I love eating that stuff.
Yeah, frozen dinners are unfortunately more convenient when in a hurry out the door, but I suppose eating them less frequently would not be too bad either. Just to change it up a bit each day.
Another thing I've learned, even if you can't eat healthy all the time, there is portion control. Its never a good idea to eat too much of anything, lol.

Studies have shown that people who do lose weight slowly using healthy methods keep it off longer.
This is what I have learned from Kyra, she's the one that told me that so it did give me more confidence that I was doing ok.
And no offense, MLG, but humans cannot just live on fruits and vegetables alone. You can't get any energy off of that. We need protein to survive, there are plenty of ways to get it. Everyone's body works differently, maybe you're already used to eating that way, but like Crickeylynn said, if you do go back to eating normally, it might backfire on you so be careful.
