The SaGa games don't have any storyline connections to one another (or if any, I haven't noticed), so it's not a big deal to play them out of order. I think that SaGa 2 is the most popular of the first three Game Boy ones, so it makes sense that it's the one getting the remake.
Honestly, though, I don't think the series is very good. It thrives on that FF II-style leveling system where your stats increase through attacking, defending, and taking damage, which I find more difficult to deal with than a traditional experience- or equipment-oriented system. Whatever. I'm sure the balance is going to be improved for this remake, but I'm not really that excited about it.
Well seeing as I never played the series, and seeing as it will follow FF2's strengthening system, I think I may pick up this game.

Yes, but FF Adventure is a different series. The three Legend games are actually SaGa 1, 2, and 3, while FF Adventure is the first game in the Seiken Densetsu series (aka ____ of Mana). They were packaged similarly, though.

I seem to remember a friend of mine getting the original version back in the mid to late 90s. Either 1 or 2, I can't remember. I might get it if it looks good and comes to America.
