It seems that so many characters in One Piece are way too big compared to others. For example: Gekko Moria. Why is he so big? I understand that there are giants such as the Elbaph warriors, but then there are people in between giant size and normal human size. Was this ever explained?
What's with everything seeming so out of scale?

No theres no formal explanation for so many people with gigantism and inhuman looking human beings.
Maybe way later in the series theres a reason for such exaggerated features of certain people(like WB is descended from Giant&human hybrids, fukurou,Moria, Long-arm Tribe people like Apoo being a different kind of human being, etc.) but for right now its just how Oda decided humans are OP are.
Like animal people populating DBZ's earth, they just are.

I don't think it's giant hybrids. Moria is big but look at Wotans. Big Pan was far bigger then Moria.

There are also people with ridiculous impossible strength, and people who manage to perform magical effects with structurally simple tools.
Although it's a fantasy story, should occurrences in fantasies follow reality?
This is my opinion.
Fantasies are the result of creative and imaginative thinking, and thus, do not necessarily follow real world laws. Oda has the right to create any kind of world he wants, whether we like it or not. However, we reserve the right to refuse to read and look at what he creates. Not much of an argument here.
The argument is this: should Oda justify his creations? Gekko Moria is a unique figure, and is properly out of our expected norm. His neck is very long, he has no chin, he has a round belly, and stubby legs. But he's huge. No one knows where he comes from, but no one in the story cares. However, as readers, we have the right to ponder this question, and I believe Oda intended to keep it that way. I don't think Oda will be answering this.
Here's what I think about why Oda made his characters wacky. The appearance of a character helps depict the personality, manner, and actions of a character. For example, Sanji is a character who was introduced as cool and collected, but has a playboy side. Very soon, Oda developed him into a guy who is cool in battle, but when having fun, he's a complete horny moron. As for non-Strawhats, let's look at Whitebeard. He's gigantic, but he's not a giant. But what do we think of when we think of a big person? We think he's got a lot of physical strength. But in addition, he's given a highly decorated mantle, a gigantic mustache, and the face of a tough guy. That helps express that he's like a king of pirates, although not Pirate King.
Now what about a wacky character like Gekko Moria. Well, his stubby legs are more suited for sitting down, which he likes to do. It helps depict him as a lazy person who lets other people do work for him, in return for a bit of his power. He has devil horns, so he's supposed to be evil. He's gigantic, and remember being big is supposed to mean he's powerful. And he is. He's got complete mastery over shadows. As for his neck, I think that is long to add to his height, and to make him look like he has all his weight sagging to his round bottom.

I don't think you can say Geck-moria or Kuma have gigantism. If you look at their character models They have a large upperbody but thin legs. Same goes for Urouge. But when you look at WB his legs are completely proportional to his body and he's just as big if not bigger than the others. So i think theres a separate class between gigantism and just really big ppl like kuma, moria, etc

A large frame was necessary for Moria to keep him from fitting onboard the Sunny-Go.
That lazy, spooky shadow-guy would’ve otherwise had Straw Hat status on lock.I just want to know if it’s a family thing. Or if certain mothers occasionally blessed with house-sized offspring.

Thinking about Oz, his frame suggests weight and great arm strength, but low jumping height and mobility. But with Luffy's shadow, he suddenly becomes agile. It's part of Oda's humor to put the Strawhat shadows in inappropriate bodies.

It's only genes, BAKA!! Just because none of us, humans, reach such gigantic bodies, we already conclude that it's outside the scope of science. Just to tell you, there are many species here on earth which can have their largest members 100 times bigger than the smallest members, yet they're still the same species. Just compare a Mastiff and a Chihuahua and you'll know what I'm talking about.

I'm more interested in the why than the how.
I think it's mostly to make the strawhats look more like underdogs when they fight against larger opponents. I bet it makes the fights easier to draw, too.

It was said a lot in the Thriller Bark arc that whatever the shadow does, the body is to follow, even to the point where Moria could stretch Odz's body by stretching his shadow. So maybe behind Moria's gargantuan size is the manipulation of his own shadow by himself, since he has proven himself able to do that many many times.
As for why he would want to do that I have no idea. Perhaps when he was accepted as a Shichibukai, he thought a more threatening stature was in need. He did size up perfectly with Kuma in that one picture; maybe he used him as a gauge.
That's more of a reason for Moria to be weird though. As for why Oda makes his characters look like that… Igetownd had some logical insight. And besides... look at the SBS's. Oda is just a zany guy, he doesn't really need a reason...

^^ This is the type of Oda-logic I would expect to answer this thread were it an SBS question. Since there are multiple islands with different sized "giants", there could always be islands with "giants" / people that are like 10'~30' tall.

One Piece may be fictional, but I always like a nice mix of rationality and fantasy in my fiction. If something is too off-the-wall it kinda bothers me. It's pretty much the only thing in One Piece that has irked me while reading through it.

heh, forgot about that list. It would pretty cool to see an entire arc about the Strawhats getting trapped in a Dwarven Mine. Inside they get split up, maybe because of a rock slide, and they run into some Dwarf allies, who help them find their way out. Or, the Dwarves could help them find their way out to fight a villain who got them trapped in there or something. I wonder if we are going to get any other of those good races later on.

I gotcher reason: Oda likes to make some people very very big, and/or freaky looking, possibly because he thinks it's cool, and because his style is very cartoony, yet people inexplicably try to tack on real world biology to it.

You just have to keep in mind that Oz is ancient. He's like a dragon, a fantasy creature that defies explanation (but we know existed). He's got a bit of a story.

The skulls on Oz' are bigger than a giants skull too… Means there must have been more "Oz-like" giants. And Oz died in a time when the World Government was already in control over the "world". Honestly... i wonder how many Marines were used fight those creatures... it was said Oz was a criminal, perhaps there are still some giants like him left inthe world?
Well i hope that Jinbei is not so huge like Kuma... Kuma standing in front of Perona was a shocker. Didn't help me liking him.
