As far as I know, Luffy is the only stretch-powered hero who has the ability to absorb body blows without taking extra punishment. Mr. Fantastic and Plastic Man can deflect bullets, but they can still get tied down and beaten to a pulp. Mrs. Incredible is most likely the same, but the Incredibles Family vs. Luffy and company would be some crazy kind of fight.

Mr. Fantastic may have the brain power, but he would never be able to predict any of Luffy's actions, leaving him at a great disadvantage. Besides, Luffy does not only have the stretching powers, he also has a raw muscle strenght that rivals Zoro.
I'd kinda like to see Luffy VS Plastic Man from DC… now THAT would be fun. Luffy is dumb and unpredictable, Plastic Man is flicking insane and Unpredictable... that would be so funny...

I don't think Luffy gets thinner while he stretches, either. Still, I'm voting for Luffy-san (Just a habit of adding 'san' at the end of every Japanese name, ignore me), since he's soooo much more cooler and oh-god-he's-so-damn-good-looking!!
