Paper Mario - Just picked up this game again and I've totally rediscovered it, I like chapter 7's in particular
Tales of Symphonia - I just liked the music in general, most all of it
Earthbound - Giygas' battle music makes it
Final Fantasy 8 - The boss music is fucking epic

FFIX is probably my favorite in that department, though
Dragon Quest VIII is golden too
and F-Zero GX's tracks were awesome. I kinda wish they didn't go for the techno thing, though it was still pretty great
