The only Enterprise episodes that impressed me were the ones that featured actors or plot devices from other trek series (such as the finale and the mirror universe 2-parter, I had always wondered where the Constitution-class Defiant went off to!!!)
Star Trek Voyager was alright. I loved the Borg episodes and the development of all the characters, mundane and recycled they might have seemed. The premise of being stranded far off from known space also made for some interesting new villains and aliens rather than the romulan-klingon obsession of tng or the bajoran-cardassian-ferengi obsession of DS9. On the other hand, the captain was predictable, the vulcan was predictable, the ship wasn't the Enterprise, and the aliens…well...to me, weren't as good as the klingon-romulan-cardassian folk from other shows. I think after DS9 they ought to have come up with a better premise for a show. Two previous treks already had starships with voyages of their own. And come on- ANY Enterprise looks and IS better than the Voyager. So it can land. Whoop-de-frickin doo.
Star Trek Deep Space Nine was interesting. It was one of the last treks I had seen for the first time, after being introduced first to TOS then TNG and Voyager, then Enterprise. I gotta say, the show was fairly brilliant in the sheer number of characters in it. Unlike Next Gen. or Voyager, which had single digit casts, this one had a NUMBER of characters- most of whom were funny or interesting or likable. The plot of the show was nice to have- perspectives from people living on a stationary space station as opposed to boldly going. As it turned out, it wasn't nearly as boring as it sounded like to me. I'm not really a Worf fan, but his addition to the crew was good, and the U.S.S. Defiant was a cool ship! I adored the character of Dr. Bashir, and identified with him the most.
Star Trek The Next Generation was pure gold, in my opinion. The characterization was revolutionary and not merely a repeat of TOS as they could have attempted (throwing a scotsman, vulcan, black chick and an asian pilot together) which was nice to see. Sure, Wesley Crusher was a pain to listen to but hey! He more or less disappeared after the 3rd season! Characters such as Troi, Data, Guinan, Q, and of course our good captain Jean-Luc Picard were very INTERESTING characters. Some of my favorite TNG episodes are where Picard loses the firewall and lets the viewer in on his past. The action in the show was good when it was employed and the design of the Enterprise-D was different, but still elegant and beautiful. The films that followed the series were all excellent (except Insurrection, which to me felt more like an episodic plot than a film). Overall, best star trek made with the exception of...
Star Trek: the Original Series. First trek I was introduced to as a boy of 8. The stories were all fantastic and plot seemed to be the driving point of the show, rather than placing character development as a high priority. Even so, everybody became familiar to the viewer and everyone had something special to offer. And come on- who can really hate on James T. Kirk?! He was a childhood hero of mine. Dr. McCoy follows him as a really special character to me, as I myself am from the American south and have a few relatives that act like him a lot. Sure, this trek may have been the most overdramatic and corny, sure the special effects are laughable by today's standards (and even those of the 90s) but you know what? TOS will always be what I think of when I think "Star Trek" and it will be my favorite forever.
The Motion Picture was a nice try but a sore disappointment (and an utter failure to compete with Star Wars, as it was intended to do). The Wrath of Khan was a beautiful film itself, not just a good trek movie. First one I ever saw, too. The Search for Spock was good, although a bit sad here and there. The Voyage Home was the funniest-and lightest- trek movie. Not bad, but the whole saving the world with whales thing is a bit of a stretch to me. The Final Frontier was a bit more like an episode to me than a movie, and it frankly has its problems. The Undiscovered Country was excellent and was a very good send-off for the TOS cast.
The 2009 Star Trek remake...blew my mind, and made me happy to be a Trek fan amidst all my friends who had laughed at me all these years for being one. Because of this movie (my personal favorite trek movie) they now understand. 
For anyone into TNG I found something I had read 3 years ago, in celebration of that trek's 20th anniversary. EW's top ten episodes.
