Well that explains why you don't understand that the previous anime already did everything just fine. How can you judge it when you haven't even seen it or how they handle all the pacing and actual story? An out of context 30 second action scene clip is irrelevant compared to the whole 50 hour product.
Most probably it'll be split into seasons. Madhouse has very fast pacing so I'd expect season one to cover at least till the York Shin arc.
York Shin doesn't even start until chapter 70 and then it goes till somewhere in the 120's. Even squeezing 3 chapters per episode (the upper limit of what you can comfortably fit, filler free, without losing anything…) that's still 40 something episodes. And HxH has a LOT of talking, so it'd be less than that, so closer to 60 episodes if they do the more standard 2 chapters per episode.
(The previous anime and OVAs came out to 92 episodes to get through Greed Island, incidentally.) Either way its the better part of a year-2 years+ ... and taxing their resources. Just to get close to where it was. (The upside is, it really could be 3 years without any filler with the amount of content already there.)
Do you want them adapting 6 chapters per episode? Given that you hated the Inu Yasha ending (And if ever there was a series that needed editing and to fit 5-7 chapters into a single episode, it was Inu Yasha) you can't want this insanely rushed too.

I'd have to agree with Robby, but its probably the result of the new animation studio combined with the long hiatuses. Its a way to draw new fans as well as get back some old ones who may have been put off by the hiatuses. Its also a way to give people a refresher. I just wish I'd known this before I watched the entire anime and ovas since it probably will feel like too much of a repeat now
Slayers Revolution came back after a 10 year break, caught veiwers back up tot the basics within the first episode… and then not only ran with it, but then got insanely continuity heavy with tons of references to past events.
Of course, Slayers Revolution kind of sucked, (mostly on account of blatantly rehashing the original first season of the show, right down to BOTH of the villains) so maybe its not the best example.
