I work in the film industry, here's what I believe to be a "realistic" look at what we can expect. Younger unknowns, lower price tag actors, and hungry actors that can commit to a 10 season order.

Nami: Emilia Jones (Locke & Key) Showed she had the gravitas for the "Help me" moment and the comedy chops to hang with the gang
Luffy: Griffin Gluck (American Vandal) This kid is great. He's got the likability, goofiness, and the stoicism needed. He's half Japanese.
Sanji: Skyler Gisondo (Booksmart) – This dude is hilarious. He had jokes in Booksmart that coming from most other actors would have gone stale very quickly. Meaning he can hold the Nami gag for years. The "cool" guy approach can be handled by anyone, including him.
Arlong: Bokeem Woodbine (Queen & Slim, Shocker in Spiderman: Homecoming, a million things) This dude plays evil so well. Phenomenal actor. Chiwetel Ejiofor is my second choice.

Both have an evergreen look and have the potential to be the next action star. They both have good comedic timing as well. I like the suggestion of Griffin Glulk but I don't know how well he would do with the action scenes.

Maya Hawke seems to have good acting chops. I can see her real parents playing the role of Nami's adoptive parents. Ethan Hawke also can pull off the Genzo stash, and Uma Thurman can easily be the badass marine who never got a chance to settle down.
Usopp: Wouldn't mind if another unknown actor played him. Marcus Scribner or Amir Wilson? Usopp's character plays off of a lot of the crew members. he and Nami can relate with being the most human crew members. He is basically best friends with Luffy. Maybe a comedian can play Usopp.
Sanji: Bills Skarsgard or Ross Lynch. I can see the Skarsgard family playing the Vinsmoke family a little too well for it to be a coincidence.

I like the suggestion of Chopper saving his CGI moments for when he actually transform..they could do something similar to how the Hulk is handled or Titans beast boy transformations. Assuming that brain point Chopper will be full CGI Detective Pickachu style..the actor would be the one playing Chopper in his human form for majority of his screen time.
Robin: Alexandra Daddario or Elizabeth Debicki
Alexandra has eyes similar to Robin and Elizabeth has a unique screen presence and a mature vibe to her. Both actors have a decent poker face that Robin typically has. Just put pulp fiction hair on them and hand them a cowboy hat.
Franky: John Behlmann or Alan Michael Ritchson
John Behlmann said in an interview that he would like to play a superhero. He admires Jim Carry and has the hair and potentially the personality to pull of playing someone like Franky. here is the interview that I just mentioned
Jinbe: Robert Oberst
He has a cool personality and is built like Jinbe. I have always felt that Jinbe has a strongman body type. Robert also swims pretty well.
Kat McNamara would make a better Bellemere. I can't imagine she would commit to a show for 10 years that would (likely) mostly be abroad. Plus, if Green Arrow and the Canaries takes off, she'll not have the schedule for it.
I like Ethan Hawke for Genzo, pretty high price tag though. Uma Thurman's way too old for Bellemere, she died when she was in her early 20s. I'd like to see Uma Thurman as Nico Olvia though.

Bill Skarskard is a bit too old imo for Sanji, the Chopper choices are waaaay too old, and I'm of the belief that the roles Fishmen/Mermen characters should be saved for minorities, including Jinbei.
Even Lewis Tan is too old, but I'd let that one slide since Zoro had a reputation before meeting Luffy, so he could be aged up for the series.
and I also hope they layer in Haki much earlier as well. The first display of it should be Mihawk, and there should be an effect on Zoro's swords when he eventually defeats Mr. 1.

Half the crew could be 25.
Brain point is too chibi for a normal teenager to play so they are better off doing something like pokemon or the sonic movie for that transformation. Heavy point is the closest thing to a human and Chopper looks nothing like a 15 year old an actor in his twenties could easily play heavy point Chopper and the tv series could make that his go to regular transformation. Post timeskip is even worst for Chopper.

So how will all the wierd shaped people even even look Like. The ones with bigger head then body(Ivankov), no legs beefcakes, all giants from normal human giants like admirals, wb, BB to elbaf giants, San Juan Wolf, all fishmen. Will they all be full CGI Like brook or chopper or they will just forget about all that and have regular human with make up or Something. And that's without all the crazy fruit powers or creatures Like seakings and Zunisha, dwarfs.
Oda has a stylized drawing. Characters like Jesus Burges who have big upper bodies and skinny legs could just be translated as body builder physiques. Jesus Burges: John Cena.
Felipe Esparza has a body shape similar to black beard.
Dustin Clare with prosthetic nose, web fingers and some makeup Could look like Arlong.
Some characters can work without the heavy use of CGI but as the series progresses we get characters like Moria who will probably be mostly CGI unless their character design is completely redone to suite the tv series medium.
I think a lot of the randomly weird looking people will just get normal bodies. Oda's designs are imo actually the hardest thing to translate into live action. Like, will Usopp even keep his long nose? Will Buggy keep his red nose? And those at least have normal bodies…characters like Kuma will be impossible to portray without makorly changing their outward appearance.
compared to other mangaka designs I think Oda draws inspiration from real characters either from actual history or other mediums. If each character is looked at case by case then they can break down the core components and find someone who can fit them best. For example the admirals being based of actors. Whoever was attempting to take on the role could study those actors and put their own flavor on it. Usopp could have a normal nose and it would still be Usopp as long as the personality is there. They could put a long nose on Sogeking's mask as a reference or shout out to Usopp's nose. The actor could also have a large regular nose.

There is already a big problem with relegating minorities into the alien roles. One Piece has no reason to join that shit party in the year 2020.
First of all, there is no reason to assume the cast is/should be white.
While you could make an argument that it makes sense to keep people from the same ocean being the same ethnicity (ex: east blue = asia, north blue = europe), OP is about travelling the whole world and meeting different people. But Oda just likes drawing cool characters and never once drew any detail to indicate these people are all the same race because their eyes/nose/whatever looks like this. Exception being the wings of the sky island people but apart from their wings they looked as diverse as the rest of the cast.
Yes, it's a "hollywood" production we can expect a ton of white actors, but this series is not meant to be a netflix niche, it's meant to be the greatest series they've ever produced. They're counting on fans around the world, they should look at the Fast and the Furious saga, it's super popular because it has heroes and villains from a ton of different backgrounds (ethnicity and country of origin).
Also, Fishmen and Mermen are literally the most diverse look in the whole series. A race where your parents looks (i.e. the fish they are) bears little to no weight to how you look (i.e. the fish you are).
I wouldn't worry about it, Netflix is pretty casual about the whole race thing.

So imagine a crew of evil black people enslaving a village as the climax of the season and the backstory of one of the main characters that has a pretty high chance of being white. Yeah, no way Netflix is gonna go for that.
Sure, that gets flipped on its head later and it turns out it's the fishmen that are actually oppressed in this world, but how many seasons away is that?

For East Blue I wouldn't mind if Luffy, Nami, and Usopp are all new actors. However, for Zoro they need to find someone who is well versed in swordplay and has a resume that backs that up.

He can KINDA pull the look if you squint, but he doesnt seem to have acrobatics abiliteis or be trained on combat or gymnastics, which even having body doubles, we need from an actor trying to play Luffy

I disagree he totally gives me Luffy vibes in his interviews goofy and silly just like him but all we can do is wait. The overall story and how they adapt everything is most important on top of the actors portraying the characters and for a show like One Piece it could work as a live action but they would have to find the perfect balance with every thing

I can see Ryan playing Ace though, if this series makes it that far. I also agree 3 out of the 5 actors they cast for the Strawhats must be able familiar with Martial arts style fighting at least to do the stunts and fight scenes especially with Sanji he's always kicking when he fights so they're gonna have to cast someone very flexible with maybe some Gymnastics experience to do that job for Sanji
