I wouldn't rule out Pudding trying to get Chiffon to lower her defenses just so she can kidnap Pez. But if she does, there'll certainly still be some internal conflict.

I've been waiting for that baby to get kidnapped for this whole arc. Pudding being the captor, and for a selfless purpose at that, would be delicious.

If Pudding really is helping Sanji, here's how I'd like it to go down (even though it's really unlikely).
Pudding doesn't seem to have a lot of love for her mother, so what if she tries to poison the cake? Poisoning a starving person (albeit, a weird kind of starving) sounds like something that would be utterly repulsive to Sanji. It would be cool seeing his respect for food conflict with his love for women. Maybe he could even slap her or something.
You guys might be expecting too much or your expectations are going to drop.
I know. But I'll probably have fun either way.

She started out apparently supportive of Sanji's leaving, when in fact she was all set to kill him, them bursts into tears at Sanji's complement about her eye, swears to take revenge for humiliating her along with that cryptic "of Mama takes care of him for me I should reward her" line, them gives Chiffon the teary eyes to save Sanji.
That's at least four flips I count.

She started out apparently supportive of Sanji's leaving, when in fact she was all set to kill him, them bursts into tears at Sanji's complement about her eye, swears to take revenge for humiliating her along with that cryptic "of Mama takes care of him for me I should reward her" line, them gives Chiffon the teary eyes to save Sanji.
That's at least four flips I count.
The first and third one you list are her lying, first to the Straw Hats, then to the Charlottes.

That's precisely why I'm counting them. She's gone back and forth, honestly and dishonestly, that I don't entirely trust her now even though her sincerity is probably the most likely outcome.

I could easily have misunderstood something, but I stand by my statement regardless. The woman's a self proclaimed deceiver and has shown it at least twice.

Pudding failing to shoot Sanji wasn't really a flip though. He took her off-guard, and she faltered. After she regained her composure, she tried going back to her old ways, but Sanji seems to be onto something that her old ways may not be the best fit for her. With that in question, we're left wondering whether Pudding's act in front of her family or her act in front of Chiffon is the real one.

Interesting seeing how Big Mom uses Elbaph techniques. And look at that, she pulverized King Baum and the shock was felt outside the island, I guess that puts her on par with Kaido and his goon performance~
This was indeed Nami's chapter, manipulating Baum and Zeus. At the start of the arc I thought maybe she would ~capture~ Zeus in her Clima tact, but given that Zeus is Big Mom's soul I thought it wouldn't be the case anymore. The alternative was pretty good.
Luffy calling Zeus boring because he cannot ride it was pretty funny. It is quite surprising how Big Mom is actually more rational than it was first led to believe, giving orders to seducing woods and all.The highlight was Prometheus though, his butt attack was fire.
My, such a great setup for the Straw Hats to escape, with all the lines of security and counter measures in place. Such a nice build up. I wonder if Katakurri actually knows they will show up. Such hilarity seeing everything being alive, like the bullets, it gives a morbid feel to the arc.
And Pudding…well if she is acting, this is her best performance of the entire arc.

And pudding's real self is actually a guy but sanji won him over and nobody knows he's a guy since he erased everyone's memories the pudding we see is just a cracker clone

Assuming she's sincere. She's been back and forth enough that it's hard to guess, even if sincere is more likely.
I think its not that she's back and forth. It's more like that she's still genuinely loyal to her crew while also liking Sanji, but not wanting to admit it to them. Which is fair enough.

1. She was evil all along at first. This was because her kindness was an act, as she was known for being a monster because all found her third eye ugly, thus she felt she was expected to be one.
2. Until Sanji revealed to find her beautiful even after seeing her third eye. From then on, the act she was putting on was acting like she still hated him, which wasn't true..she merely is loyal to her own crew (sort of.) and didn't want to reveal she liked Sanji because it would make it difficult for her to achieve anything. Bear in mind, if she revealed any fondness for him, the crew would have stopped her.
All that said, it's my theory. You do have a good point that it is indeed odd and unclear.
