Gentleman… those are character moments. And I already knew about them.
No, what I'm asking are significant changes to characters personality. Something that sticks, and not a declaration after which they act almost completly the same.
I don't see why those "character moments" can't be considered development. They're not empty declarations/moments, they're significant events that affected their lives.
Nami backstabbed, not just Luffy and the others, but countless other people for years just because they were pirates. Even just the word "pirate" disgusted her in a 1000 different ways, now she is a pirate and she's not ashamed to admit it one bit.
Nami, for years, always insisted on solving her problems alone to keep her loved ones from getting hurt or concerned and she stubbornly denied Luffy's help. Her break down after Arlong's betrayal made her accept the fact that doing everything solo wasn't the way to go about things and she finally let Luffy and the villagers help her.
Nami was noticeably upset at the idea of stopping at FI during the post-enies lobby arc, it wasn't stated outright but she clearly had a fairly negative image of fishmen due to Arlong's influence. Once she spent some time with Jinbe and let him tell his side of the story, she ultimately accepted her past and focused on how it affected her life in a positive way rather than a negative way. She's completely okay with having Jinbe join the crew later. A younger Nami would most likely have had some trouble accepting someone like Jinbe as a member of the crew.
Her obssession over money and her bossy attitude still remain but what would a character be without a few flaws?
Chopper had some crazy self-esteem issues when he was still a newbie to the crew. Even before he joined he had a lot of inner conflict and clearly had issues liking himself and what he is. He was a socially awkward mess and had an extremely fractured "love-hate" relationship with the human race.
During the entire Skypeia arc, Chopper would not stop worrying about how he could help the others without being a burden. He looked for any and every way to prove his worth to the crew and it nearly got him killed more than once. Sometime after the Foxy arc he eventually felt comfortable enough in the crew where he didn't feel the need to prove himself every five minutes.
While the crew was separated Chopper openly declared that he no longer cares that he's a freak and a monster, it doesn't bother him anymore. In fact, he states that he'd gladly become even less human-like if it meant he could help Luffy achieve his dream.
I'd be here all day if I talked about Usopp, so I'm skipping.
Robin was suicidal near the end of the Alabasta arc, I'm almost positive that the rare coincidence of having another "D" carrier save her life is what kept her from just jumping in the ocean herself. For a while I'm sure she gradually began to appreciate the company and value her life a little more but the return of CP9 reminded her of the harsh reality and she remembered that her existence only ruins other's lives. Something that she believed to be undeniable fact until you know who convinced her otherwise.
Robin also used to be significantly distant from the rest of the SH's, aside from random one-liners or short comments, she only spoke to the others when she needed to. Now she's way more invloved in the SH's conversations and antics, especially recently in Dressrosa. She gives her opinion more often now and she isn't too cool to act goofy with the others anymore.
I could go on, but it's really fucking late where I am and I need to sleep. But yeah, the stuff you're saying doesn't exist clearly exists man, for some reason you're just choosing to not acknowledge it.
