Like Toriyama did for Dragon Quest, Chrono Trigger and Blue Dragon? Dunno if he'd be up for it one day but it'd be interesting to see what a manga artist with huge variety in character design could do.
Is Oda likely to follow Toriyama's footsteps and provide art for a video game?

I dunno, Toriyama's art is…"safe." Oda, especially over the recent years, tends to veer off into extremely bizarre character design. I don't really see it working all that well in the video game medium.

Difference is, Toriyama was doing that well before Dragon Ball became uber-popular.
While Dr.Slump was extremely popular, it wouldn't be exactly the same.If anything, IMO, Dragon Quest's phenomenal popularity (the most popular RPG series in Japan) multiplied Toriyama's own popularity, not simply gain from it.

I mean, who would want to see Kokoro-baasan like characters in their PS3?It wouldn't suit something like the character design of Dragon Quest… But an adventure game, like an MMORPG with Backgrounds by Oda would be something to look for.

I don't doubt Oda would be willing to do it. He'll probably volunteer for quite a few things, especially after One Piece ends.
The horrible thing is that I'm going to end up buying any game because of his art work, which is so not good.
