That's made up. He has only brought the topic up a few times. In chapter 529 he states his reasons for supporting Whitebeard. After that, he mentions that he won't let Croc lay a hand on him and tells all the other pirates who want to kill Whitey to shut up. Everything else has been more of a concern over Ace and the world should this whole thing go down. This flashback is the same thing, just being reiterated. He is grateful, and will do what he can. For someone who's favorite lines are "lol", "smh", and "you lack inferring skills", you are really missing the point here. Think about it, if your hometown was getting raped and pillaged non-stop, then some guy declares protection over it, wouldn't you be grateful and do whatever you can to ensure that he remains alive and in power? This is far from abnormal behavior.
Jinbei: "I'll never forget that day! Ever since then, Fishman Island was off-limits to anyone who would seek to run rampant…The POWER he wields...! He protects many islands with the use of his name in this same way… This is not the kind of man who can be freely toppled, just because he's a pirate captain! SURELY the government is aware of what would happen on the seas if Whitebeard should die!!"

See, this is what I am talking about. The only thing I can see that Oda has "pinned" to Jinbei, is that he is a respectful and honorable person. Among a race of violent (fish)men, he stands out as a more peaceful person, having a hate for "pirates" and violence. The primary reason he likes Whitebeard is because Whitebeard isn't a conventional pirate, and provides peace and protection for dozens of islands. Jinbei wants to protect that. He is grateful for it. He uses -san when speaking to Ace, so he obviously respects him as well, and not necessarily "by extension".

Luffy has began to say this over time regarding his crew and it isn't a stretch when he says it about his own brother. I recall him saying to Iva something like if his brother dies he might as well too.
Jinbei is no different. There is a lot riding on this war, and he knows it. A lot. As for Ace, he cared about him near as much as Luffy and Whitebeard did, so his lament over Ace's death is completely in character.

Zoro saying that about Luffy shows the stark difference when it comes to Jimbei. Zoro specifically said he'd kill Luffy if he got in the way of his dreams. Now he's ready to give his life up for him with his dream is more important talk.
First off, a lack of knowledge is no basis for argumentation. Second, Jinbei putting his life, and or hidden dream, on the line for the sake of Ace and Whitebeard is no different than Zoro or Sanji doing so for Luffy. They all just understand that there is greater purpose in their sacrifice than there is for them to stand by and do nothing, which is exactly what makes his statements important. He has exactly what Luffy always states is necessary to be a real pirate.

I'm just reiterating, but Jinbei's fight is not only for Whitebeard. He has stated that he is willing to put his life on the line for not only Whitebeard, but Ace as well, and by extension the entire underlying reason behind his initial disapproval of the war: the fact that Whitebeard dying means no more protection for Fishman Island and miscellaneous New World island #1, 2, and 3. Much, much more at stake than simply "I owe this dude a favor, so I might as well…"

I just thought of something, with Luffy in his current traumatized condition we could be sure that Ace dying had an enormous impact on him. Wouldn't someone like Jimbei who has a history with Ace serve as a catalyst to further the traumatization, in the event he joins? Still no thoughts??
I don't think so, no. Jinbei might share his pain, to a degree, but I don't think he will serve as a reminder that Ace is dead. Even if he did, I doubt Luffy will be that irrational about it. I expect his crew to bring him back to his normal self, and he will see that he needs to live in honor of Ace and his sacrifice, not regret. (Unless I misunderstood you).
