Perona moved that treasure onto the ship, she also packed all the food and provisions onto the ship. She already sacked their ship of everything prior to that, and then she returned all of their things and then some…

Regardless, that stuff was placed onto that ship, even though Perona didn't know how to use that ship or anything, and she could have gone and took the other ship that was hidden somewhere which Moria and Hogback escaped with (Absolam too…).
Since when did the Sunny have a super complicated method of piloting? It doesn't. It would be no different then if she stole Moria's ship. The other ship was worse then the Sunny and didn't have a treasure sitting on it.

It's no more hidden then the Strawhat's. The only reason that one escaped unnoticed was because Absalom used his powers with it.
Otherwise they had the same sort of escape factor. In both cases she would be stealing someone's ship, except she was sure the Strawhats were busy with Oz, which with one exception they were.
